Roasted sweet potato & black bean bowl

Why now: Complex carbs and magnesium-rich beans to steady mood and energy when the luteal dip hits.

Ingredients

  • 2 sweet potatoes, cubed
  • 1 tin black beans, drained
  • 1 avocado
  • Spinach or any greens
  • Cumin, smoked paprika, olive oil
  • Lime, yoghurt or tahini to drizzle

Method

  1. 1Toss sweet potato with oil and spices and roast at 200°C for 25 minutes.
  2. 2Warm the black beans with a pinch more cumin.
  3. 3Build bowls with greens, sweet potato, beans and avocado.
  4. 4Finish with lime and a drizzle of yoghurt or tahini.
