Roasted sweet potato & black bean bowl

Why now: Complex carbs and magnesium-rich beans to steady mood and energy when the luteal dip hits.
Ingredients
- 2 sweet potatoes, cubed
- 1 tin black beans, drained
- 1 avocado
- Spinach or any greens
- Cumin, smoked paprika, olive oil
- Lime, yoghurt or tahini to drizzle
Method
- 1Toss sweet potato with oil and spices and roast at 200°C for 25 minutes.
- 2Warm the black beans with a pinch more cumin.
- 3Build bowls with greens, sweet potato, beans and avocado.
- 4Finish with lime and a drizzle of yoghurt or tahini.
