Ingredients

  • 1 tin chickpeas, drained
  • 1 cup cooked quinoa or bulgur
  • Cucumber, cherry tomatoes, red onion
  • Big handful parsley and mint
  • Lemon, olive oil
  • Smoked paprika, salt

Method

  1. 1Toss chickpeas with paprika and a little oil, then roast or pan-fry until crisp.
  2. 2Chop the veg and herbs and fold through the grains.
  3. 3Add the warm chickpeas, dress with lemon and oil, season and serve.
