Ingredients
- 1 tin chickpeas, drained
- 1 cup cooked quinoa or bulgur
- Cucumber, cherry tomatoes, red onion
- Big handful parsley and mint
- Lemon, olive oil
- Smoked paprika, salt
Method
- 1Toss chickpeas with paprika and a little oil, then roast or pan-fry until crisp.
- 2Chop the veg and herbs and fold through the grains.
- 3Add the warm chickpeas, dress with lemon and oil, season and serve.
